Baking with Stoneground Flour with Farm and Sparrow’s David Bauer

I cannot tell you how thrilled I am to be welcoming David Bauer to the Barn! As many of you know, I am obsessed with the beautiful heirloom grains that David works tirelessly to have grown and milled through his company Farm and Sparrow. A baker by profession, he now focuses on his stone-ground mill housed in a historic church outside of Asheville.

During today’s class, David will share his fascinating story and his passion for these heirloom grains.

Today’s focus is baking with stoneground grains…from wheat, to rye, to faro, you won’t believe how beautiful your breads and baked goods will taste after learning to utilize these flours. We will cook together around the island, followed by a seated lunch of what we’ve prepared.

Wines will be poured, of course, from my shop La Poste :)

A little bit about David + Farm and Sparrow:

FARM AND SPARROW IS THE APPALACHIAN BASED MILLING, BAKING, AND TEACHING PROJECT OF DAVID BAUER. DAVID IS DEDICATED TO EXPRESSING THE REGIONAL TERROIR OF AMERICAN LANDRACE GRAINS AND LEGUMES WITH AN EMPHASIS ON MAIZE. HE BELIEVES THAT ANCIENT AND HEIRLOOM VARIETIES SHOULD NOT BE TREATED AS HISTORIC ENTITIES BUT RATHER AS A LIVING BEINGS THAT CONTINUE TO EVOLVE IN THE FIELD AND IN THE KITCHEN. 

ALL OF OUR GRAINS ARE GROWN WITH A FOCUS ON MAINTAINING THE GENETIC DIVERSITY AND HENCE THE EXPRESSIVENESS OF EACH PLANT.  WE WORK DIRECTLY WITH SMALL FARMS TO GROW VARIETIES THAT ARE UNIQUELY ADAPTED TO THEIR SPECIFIC ECOSYSTEM. ALL PRODUCTS ARE FRESHLY STONE-MILLED TO ORDER, A SLOW PROCESS WHICH PRESERVES THE UNIQUE AROMA AND FLAVOR OF EACH CROP.

cooking classes + creative workshops

+ Cooking classes and creative workshops are always small, hands-on, laid-back, focus on what’s in season, and culminate with a festive, shared meal.

+ Once purchased, your class or workshop tuition is non-refundable, but you may have someone attend in your place if you are unable to attend.

+ If the class or workshop must be canceled due to unforeseen circumstances on the part of the Barn, you will have the choice of scheduling a new class or workshop or receiving a complete refund.

+ The Barn is surrounded by hills, grassy areas, rocks, and changes in elevation. Please dress appropriately, comfortable footwear and an extra layer of warmth is recommended.

+ Not responsible for personal injury or accidents while on the Barn property.

+ Update COVID 2021:  Please be aware that during a class at the Barn we will be in close proximity to each other for 4 hours, first around the kitchen island and then the dining table.  I highly recommend that if you or anyone in your group is at all in a high risk category or have not been vaccinated, that they DO NOT attend.  Because we are eating and drinking the entire time, masks are not a realistic option. In the event that we need to cancel as we near because of a Covid-related situation on my end or yours, I will do my best to do so with at least 7 days notice and I ask that you do the same.
